Tex Mex Chicken Quesadillas

Featuring Newman’s Own® Tex Mex Dressing

2 soft flour tortillas
3 tablespoons Newman’s Own Tex Mex Dressing
2 spring onions, chopped
75 g cooked chicken strips
50 g  sweetcorn
50 g chopped red and green pepper
75 g mozzarella cheese, grated
olive oil, for brushing

Extra Newman’s Own Tex Mex dressing, to serve



1. Lay out one of the tortillas on a board and spread with 2 tablespoons of the Tex Mex dressing. Sprinkle over the chicken, spring onions, sweetcorn, peppers and cheese. Spread the second tortilla with the remaining dressing, place on top and press down.

2. Brush a large frying or griddle pan with the oil and heat. When hot, add the quesadilla and cook over a moderate heat for 2-3 minutes. Press down with a spatula until the cheese starts to melt.

3. Place a large plate over the pan and invert the quesadilla onto the plate. Return to the pan and cook the other side for 2-3 minutes. Remove from the pan and cut into wedges. Serve with a mixed salad and extra dressing.
