Kentucky Style Rub for Ribs

Featuring Newman’s Own® Kentucky Style Rub for Ribs

Serves: 6- 8
Preparation time: 15 minutes
Cooking time: about 3 hours

2 kg pork ribs
85 g Newman’s Own Kentucky Style Rub
100 ml cold water
6 medium sweet potatoes, washed
sunflower oil, for frying
sea salt
2 tsp freshly chopped rosemary
Coleslaw, to serve



1. Preheat the oven to 170°C, (fan 150°C), Gas Mark 3.

2. Place the ribs in a roasting tin and coat with the rub. Pour 100 ml cold water into the base of the tin.

3. Cook the ribs in the oven and cook for about 3 hours until tender, turning occasionally and spooning with the sauce. If the ribs start to dry out, add a little more water and cover with foil.

4. Meanwhile, cut the sweet potatoes, lengthways into long thin strips about 1.5 cm thick. Place the chips in ice-cold water and leave for about 15 minutes. Drain from the water and pat dry with kitchen paper.

5. Heat the sunflower oil in a large saucepan or use a deep fat fryer, to 190°C. Cook the potatoes in 2 batches, for about 5 minutes until crispy. Drain on kitchen paper and sprinkle with the salt and rosemary. Serve the ribs, with the chips and a spoonful of coleslaw.
